Centuries ago, these were farm buildings used to shelter livestock. Known as bordas, their characteristic stone walls and pitched slate roofs can be found in high-mountain areas. Today, many have been converted into restaurants where you can sample the country’s most traditional cuisine. From the famous trinxat (a dish of cabbage and potato topped with crispy pork belly) to escudella (a hearty meat and vegetable soup), as well as grilled meats, broad beans with baby squid, snails and much more.
